About Basler Läckerli

Basler Läckerli (also spelt Läggerli) are traditional spiced cookies that originated in Basel, Switzerland.

The name comes from the German word lecker, meaning “delicious,” combined with the diminutive suffix -li, giving it the charming meaning of “little delicious things.”

The noun Läggerli is thought to derive from the verb lägge, meaning “to lick,” reflecting the idea of sweet confections that are a joy to savour.

These cookies are made with honey, hazelnuts, almonds, candied orange and lemon peel, and a blend of warm spices such as cinnamon and cloves.

The dough is rolled out into a thin layer, baked until just firm, and then brushed with a sugar glaze while still warm.

Finally, the cookies are cut into small rectangles or diamonds, creating the iconic Läckerli shape.

A bit of history

The Basler Läckerli date back over 700 years, originally created by spice merchants who brought exotic ingredients like honey, nuts, and citrus peel to Switzerland.

They were first mentioned in historical records in 1720 and were traditionally enjoyed on New Year’s Day with hypocras, a spiced wine.

Today, Läckerli are available year-round in Basel but have become especially beloved during the Christmas season, particularly in Alsace.

Basler Läckerli: the Recipe

I’ve personally tested this recipe many times, and the photos are my own—proof that these Basler Läckerli are as delightful to look at as they are to eat!

This recipe offers a softer, more tender version of the traditional treat, perfect for those who enjoy a little chewiness in their cookies.

 

Ingredients

  • 600 g (5 cups) all-purpose flour
  • 400 g (2 cups) granulated sugar
  • 150 g (1 cup) coarsely chopped almonds
  • 4 large eggs
  • 150 g (1 cup) finely diced candied orange and lemon peel
  • 4 tablespoons honey
  • 1 packet (about 2 tsp) baking powder
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground cloves

 

For the glaze:

  • 2 tablespoons powdered sugar
  • A small amount of water

 

Instructions

Prepare the Dough:

1. In a large bowl, beat the eggs and sugar together until smooth and well combined.
2. Gradually add the almonds, spices, honey, baking powder, and candied fruit. Mix well.
3. Slowly add the flour, mixing until a smooth dough forms.
4. Put the dough into a ball, wrap it in plastic wrap, and refrigerate overnight.

Roll out and Bake:

5. Preheat your oven to 350°F (180°C).
6. Roll out the dough on a sheet of parchment paper placed on a baking tray, to about 0.2 inches (0.5 cm) thick. This recipe typically yields enough for two baking trays.
7. Bake for 12–20 minutes, depending on your oven. Watch closely to avoid overbaking. The dough should be lightly golden but not overly browned.

Glaze and Cut:
8. Let the baked dough cool slightly. Mix the powdered sugar with just enough water to create a thick glaze.
9. Using a pastry brush, apply the glaze evenly over the warm dough.
10. Once the glaze sets slightly, cut the Läckerli into small rectangles or diamonds.

11. Store the Basler Läckerli in an airtight tin to keep them fresh for weeks.
